Molten Chocolate Lava Cakes

Oh my… I don’t know if I have the words to do this dessert true justice. I think it’s one of the best desserts I’ve ever made – certainly in the top five! I had wanted to try this for some time, and the recipe I’m sharing with you today is the third recipe I tried. The first? A big FAIL. Oy… it was terrible, and I threw out the cakes – wouldn’t even serve them. The second recipe was just “o.k.” and I knew it should have been better. But this third recipe? Wow… it is just what I was looking for and I hope you will try it. And what’s even better is it couldn’t be easier! I found it on Tasty Kitchen, so a big Thank You to Brandielle!

The first and very easy thing you need to do is to melt your chocolate and butter in the microwave on high for about a minute. I cut up the butter and chop the chocolate into big chunks to make the melting smoother. And don’t worry that at the end of the minute that all of the chocolate isn’t melted. That’s good. Just take it out of the microwave and mix with a whisk until it’s melted. This way, you won’t run the risk of burning the chocolate…



Then mix in the powdered sugar until it’s well blended.

Then add in your whole eggs and egg yolks and mix it up again…

Then just add in the flour…

… and pour the batter into a measuring cup with a spout. I find this is the easiest way to get the batter into the ramekins.

But before you pour in your batter, make sure to spray the ramekins very liberally with your cooking spray. Spray until you think there’s enough, and then use a bit more!

And then just divide the batter evenly between all four ramekins.

It’s at this point you can put them in the fridge for later. Which makes it a fab dessert for company! Warm right out of the oven and ooey-gooey-chocolaty!  Once you’re ready, just put them into a preheated oven set at 425º and bake for 15 minutes. Then let them stand for a few minutes, and with a sharp knife, just go gently around the edges and invert them onto a plate. With a bit of whipped cream and shaved chocolate, you’re got yourself a dessert that is entirely comparable to a fancy-schmancy restaurant! 

Ingredients

  • 4 oz. semi-sweet chocolate
  • ½ cups butter
  • 1 cup powdered sugar
  • 2 whole eggs
  • 2 whole egg yolks
  • 6 tbsp flour
  • Whipped cream
  • Extra chocolate for topping

Preparation

  1. Preheat oven to 425˚.
  2. Spray 4 ramekins liberally with cooking spray and place on cookie sheet.
  3. Microwave chocolate and butter in large bowl on high for about 1 minute, until butter is melted. Whisk until chocolate is also melted.
  4. Stir in sugar until well blended.
  5. Whisk in eggs and egg yolks. Stir in flour.
  6. Divide between cups.
  7. Bake 15 minutes until sides are firm and centre is soft. Let stand 1 minute.
  8. Top with whipped cream and shaved chocolate.

  3. I’ve tried a few variations on these – Chocolate Melting Pots, Chocolate Lava Cakes and other names.
    This version turned out beautifully and has now replaced the others in my recipe binder.
    They really did turn out of the ramekins (so often they don’t come out), they cooked just perfectly – a little bit of a crust on the outside while hot and molten in the middle.

      Gosh, thanks so much for your kind words! I made the lava cakes again on Saturday for company! Yummmm….

      I like your blog too! I wish I had more time to devote to my blog, but I’ve been finding it more and more difficult to work on it. It takes a lot of time and I’ve just been too busy lately. But it is fun when I do have the time.
